Food is a universal language that gives you a deeper understanding of a city’s identity, which makes dining just as — if not more — important as seeing the sights. 1. Let a Local Chef Lead the Way

Who knows a city better than the chefs who cook there? Invite them to show off their culinary mastery at a tasting-style luncheon, where guests can enjoy curated small plates and wine pairings. At a recent DCi event in San Diego, for example, our team brought in MasterChef winner Chef Claudia Sandoval for a live cooking demonstration that culminated in a multi-course, Mexican-inspired experience.

2. Dream up a Day at the Market(place)

A farmers’ market is one of the best ways to experience a region’s peak-season flavors — so imagine bringing that energy straight to your event with a marketplace-themed activation, where attendees can enjoy bite-sized local fare at pop-up chefs’ stations and vendors. At a recent market-style event, our team set up a vibrant display of fresh avocados, local seafood, regional wines, and olive oils that told California’s culinary story, all in one place.

3. Teach Them to Cook Like a Pro

If you want to offer guests an experience that will last beyond their trip, consider hosting a hands-on cooking class. Invite a local chef who specializes in regional cuisine and give attendees the chance to recreate the flavors of the destination in a casual cook-along, and later, in their own home kitchens.

4. Bring the Farm to the Table

For those who enjoy the “feasting” part of a meal, plan a hyper-seasonal menu sourced from local farmers and butchers, focusing on fresh, regional ingredients. For an annual top-earners incentive program, for example, our planners capped off a five-day experience with a thoughtfully designed farm-to-table-style dinner in Ojai, California — a small, verdant town known as a “paradise for growers.”

5. Plan a Culinary ‘Road Trip’

Even within the same state, there are discernible differences in cooking styles from one city to the next — so why not whisk your guests away on a road-trip-inspired event that showcases each region’s signature flavors? For a trade show activation, DCi installed several themed bars and food stands representing a food-lover’s map of California, including a custom taco cart for San Diego and a bubble bar tap trailer for Santa Barbara.

6. Elevate Food into an Art Form

When executed with the right creative approach, food becomes a feast for the eyes as well as a memorable sensory experience that lasts beyond one evening. Case in point: at a recent event, we partnered with local chefs to transform fresh ingredients into art-forward food displays and collaborated with florists to create whimsical centerpieces, like a playful arrangement of purple endives and lilac blooms.

7. Treat Them to Fair Fare

Deep-fried, roasted, smoked, and served on a stick, the foods you find at a state fair are hard to come by anywhere else — which is exactly what makes them such a fun theme for your next event. In Texas, DCi dreamed up a traditional state fair, where attendees wandering the fairgrounds were treated to a bevy of concession stands like a “fruteria” slinging skewered mangoes, drenched in tangy chamoy sauce.

8. Give Them Knowledge to Dine their Way

For those with restricted diets, an exceptional culinary experience means giving them the information they need to confidently enjoy what’s on the table. DCi installed a “Food Guru” station at a recent event, where guests could get direct answers from a hotel chef about the evening’s dinner. Our team also recommends using mobile apps that allow guests to easily identify food types and designations at the event.
